Thanksgiving Recipe Series: Nonni’s Green Beans

For as long as I can remember, this green bean casserole has been a staple at any Bean family holiday gathering. Thanks to Nonni’s cheesy, crispy take on this classic recipe, it wasn’t until my 20’s that I actually tasted the “real thing,” the dish that most people think of when they imagine green bean casserole. You won’t find any cream of mushroom soup or fried onion pieces here! I hope you love Nonni’s green beans as much as my family does. —Katie Bean, Community Engagement Manager

Serves 6-8

Filling:
4 cans whole green beans, drained
3 cups shredded Swiss cheese
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon black pepper
1/2 cup milk
1 teaspoon dried minced onion
1 cup sour cream

Topping:
1 cup crushed corn flakes or Crispix cereal
3 tablespoons melted butter

Preheat the oven to 400°F and grease a 9×13 casserole dish.

Combine green beans and shredded Swiss cheese and pour into casserole dish. Set aside.

In a medium saucepan, combine butter, flour, salt, sugar, and black pepper. Cook until bubbly, stirring often. Remove from heat. Add milk and minced onion and whisk until smooth. Add sour cream and mix well. Pour sauce over green bean mixture and toss until evenly coated.

Combine crushed cereal and melted butter; mix until evenly coated and sprinkle on top of green beans.

Bake uncovered for 20 minutes or until hot and bubbly. Serve warm.
